Now that the house is quiet, I've dedicated my spare time to my true passion: crafting perfect, home-cooked culinary sauces from scratch. Experiment #01: Italian Classic

The Smart 6-Hour Marinara

A deeply caramelized tomato sauce engineered for perfect structural balance over pasta.

Ingredients:
  • 2 cans San Marzano whole peeled tomatoes
  • 1 large yellow onion (halved)
  • 5 cloves garlic (smashed)
  • 4 tbsp unsalted butter
  • Fresh basil leaves & sea salt
Process:
  1. Simmer tomatoes, onion halves, garlic, and butter together in a heavy saucepan on ultra-low heat for 45 minutes.
  2. Remove onion halves. Use a potato masher to crush tomatoes to your preferred structural density.
  3. Tear fresh basil leaves into the hot sauce, cover, and let stand for 10 minutes before serving.
Experiment #02: Sweet & Tangy

Mom's Smoky Apple-Cider BBQ

A robust backyard grilling sauce calculated to balance smoky wood notes with crisp acidity.

Ingredients:
  • 2 cups tomato ketchup
  • 1/2 cup unfiltered apple cider vinegar
  • 1/3 cup dark brown sugar
  • 2 tbsp dark molasses
  • 1 tbsp smoked paprika & 1 tsp garlic powder
Process:
  1. Whisk all clean fluid and dry ingredients together in a small saucepan over medium heat.
  2. Bring to a gentle boil, then instantly reduce heat to low.
  3. Simmer uncovered for 20 minutes until the sauce reduces, darkens, and coats the back of your spoon.
